Butternut Squash, Farro, Kale Salad
WHAT:
Handful of sautéed kale
3-4 sautéed mushrooms
1 cup roasted butternut squash
1/4 sautéed red onion
Large pinch of salt and pepper
1/2 cup farro
1/4 cup Parmesan cheese
Protein of choice (I added my Parmesan + sage chicken meatballs)
HOW:
Maple Balsamic Dressing:
1 TBLS olive oil
1 tsp balsamic vinegar
1 tsp maple syrup
1/2 tsp Dijon mustard
1/4 tsp garlic powder
