Butternut Squash, Farro, Kale Salad

WHAT:

  • Handful of sautéed kale

  • 3-4 sautéed mushrooms

  • 1 cup roasted butternut squash

  • 1/4 sautéed red onion

  • Large pinch of salt and pepper

  • 1/2 cup farro

  • 1/4 cup Parmesan cheese

  • Protein of choice (I added my Parmesan + sage chicken meatballs)

HOW:

Maple Balsamic Dressing:

  1. 1 TBLS olive oil

  2. 1 tsp balsamic vinegar

  3. 1 tsp maple syrup

  4. 1/2 tsp Dijon mustard

  5. 1/4 tsp garlic powder
