Banana Pumpkin Loaf

WHAT:

  • 3 ripe bananas

  • 2 cups flour

  • 2 eggs

  • 1/3 cup plain Greek yogurt

  • 1 cup pumpkin purée

  • 1 tsp vanilla

  • 3/4 cup brown sugar

  • 1/2 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 tsp baking soda

Topping:

  • 1/4 cup flour

  • 1/2 tsp cinnamon

  • 1/4 cup brown sugar

  • 3 TBLS cold butter

HOW:

  1. Set oven to 350*F

  2. Combine wet ingredients in a large bowl

  3. Add dry ingredients into the bowl

  4. Combine ingredients until smooth

  5. Butter loaf pan and pour in the mixture evenly

  6. Combine the topping with hands and gently sprinkle on top

  7. Bake in the oven for 50-60 minutes
