White Bean Chicken Chili

WHAT:

  • 1 Tbsp EVOO

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 red bell pepper, chopped

  • 2 cans white beans

  • 2 4oz can diced green chilis

  • 1/2 tsp cumin

  • 1 tsp chili powder

  • 4 cups chicken broth

  • 2 chicken breasts, cooked and shredded

  • 1 Tbsp lime juice

  • Salt to taste

  • Cilantro and avocado to top

HOW:

  1. Heat large pot with EVOO, add diced onion. Let cook for 5 minutes, then add garlic and chopped bell pepper.

  2. Rinse white beans in water and add to pot along with green chilis, cumin, and chili powder.

  3. Add the chicken broth and bring to boil.

  4. Add chicken breasts and cook for 20-25 minutes.

  5. Shred the chicken and add back to pot.

  6. Stir in the lime juice and salt.

  7. Top with cilantro and avocado and serve!
