Gluten Free Banana Pumpkin Loaves

WHAT:

  • 3 ripe bananas

  • 1.5 cups oats

  • 1/2 cup cassava flour

  • 2 eggs

  • 3/4 cups coconut sugar

  • 1/3 cup plain Greek yogurt

  • 1 cup pumpkin purée

  • 1 tsp vanilla

  • 1/2 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 tsp baking soda

HOW:

  1. Preheat oven to 350*F

  2. Combine all ingredients in a blender

  3. Pour into buttered pans

  4. Top with oats and banana slices (optional)

  5. Bake for 20-25 minutes
