Gluten Free Banana Pumpkin Loaves
WHAT:
3 ripe bananas
1.5 cups oats
1/2 cup cassava flour
2 eggs
3/4 cups coconut sugar
1/3 cup plain Greek yogurt
1 cup pumpkin purée
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
HOW:
Preheat oven to 350*F
Combine all ingredients in a blender
Pour into buttered pans
Top with oats and banana slices (optional)
Bake for 20-25 minutes
