Potato Leek Soup

WHAT:

  • 2 leeks + 1 onion

  • 4 cloves garlic, minced

  • 4 cups chicken bone broth

  • Potatoes

  • 1 tsp salt

  • 1 tsp thyme

  • 1 bay leaf

  • 1 lb ground sausage or meat of choice

HOW:

  1. Cook the chopped leeks and onion in butter for 8-10 minutes

  2. Add garlic and cook for another 1-2 minutes

  3. Add the broth, potatoes, salt, bay leaf, and thyme

  4. Bring to a boil then reduce heat and simmer for 20 minutes

  5. Remove the bay leaf and blend the soup in stages until creamy

  6. Cook the sausage then add the creamed soup back into the pot

  7. Top with a drizzle of EVOO, chives, and cracked pepper
