Parmesan + Sage Chicken Meatballs
WHAT:
1/2 cup bread crumbs
1 shallot
4 cloves garlic, minced
1 tsp dried garlic
1/4 tsp crushed red pepper
1.5 lb ground chicken
1/4 cup grated Parmesan
2 TBLS chopped fresh sage
2 TBLS chopped fresh parsley
1/2 tsp sea salt
HOW:
Preheat oven to 450*F
Chop the shallot and cook it in butter, then add minced garlic.
Combine the ground chicken, Parmesan, sage, parsley, salt, bread crumbs, and shallot mixture in a bowl. Mix until incorporated.
Form the mixture into about 12 meatballs.
Place the meatballs onto a prepared sheet pan and bake on the top rack of the oven for 25-30 minutes, or until golden and cooked through.
