Caesar Salad Dressing

WHAT:

  • 1 TBLS capers

  • 4 anchovies

  • 1 egg yolk

  • 1 TBLS Dijon mustard

  • 1/3 cup EVOO

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • 1 tsp red or white vinegar

  • Juice from 1/2 of a lemon

  • Parmesan to taste

    HOW:


    1. Mash the capers into a paste
    2. Add the anchovies, mash, and combine with the capers
    3. In a separate bowl, add the egg yolk and combine with with Dijon mustard
    4. Slowly incorporate the olive oil
    5. Add garlic, salt, and pepper and combine
    6. Mix in the caper and anchovie paste
    7. Add the lemon juice and vinegar
    8. Shave fresh Parmesan and combine
